Chicken and Mushroom Nuggets with Homemade Mayonnaise
Chicken and mushroom are my all time favorite ingredients.They are so made for each other.I have been trying so many recipes with mushrooms,cause mushrooms are high in antioxidant,heart-healthy ,overall very nutritious vegetable. I love chicken nuggets.They are so simple and so tasty.Today I have decided to cook chicken nuggets with mushroom with extra spice on it. I have used ginger and garlic paste and some dry onion powder, ginger powder,I didn’t have garlic powder so I could not use it (I love garlic powder),some paprika and chili powder for extra kick. I have also made mayonnaise with the nuggets,we can always use the store bought mayonnaise,but as they are so easy and quicker to make and tastes much better than store-bought.I have used one clove of garlic into my mayonnaise .Trust me once you start making mayonnaise at home ,you will never like the prepared one.
To make the mayonnaise:
1 teaspoon dijon mustard paste or powder.
1 garlic clove (grated).
pinch of salt.
Black pepper (optional).
1 and a half cup of olive oil.
In the food processor put everything.Process them for 1 minute and start adding the oil from the top whole of the processor while it’s still running.Add the oil little at a time.It will take 2 to 3 minutes to become silky mayonnaise.
Seasoning cornflake crust
Onion powder 5 tablespoon
Ginger powder 4 tablespoon
Garlic powder 5 tablespoons (I couldn’t use it because I didn’t have them,please use them if you have it).
Paprika for better colour 1 tablespoon.
Chili powder or black pepper 1 tablespoon .
Salt to taste.
Add cornflakes into a food processor and process them until they are coarsely ground.Then mix all the other ingredients together.

Mushrooms: 170gm diced into 4 pieces (I have used small mushroom).
Ginger and garlic paste :2 tablespoons .
Chili powder or black pepper :1 tablespoon .
Salt to taste.
Dice the chicken into small pieces and mince them.I have used chicken thigh because they are juicier , but you may use chicken breast.Dice the mushroom into small pieces.Mix all ingredients and keep them aside,by the time you prepare the coating.At this time preheat the oven to 250 degrees for 13 minutes.
To make the coating ready
Two beaten eggs with pinch of salt
Plain flour : 1 bowl with little salt
Breadcrumb that you have prepared earlier
At first, take the small portion of chicken and mushroom mixture and dip them into flour.Squeeze them with your plum.Next, dip it into the egg and finally coat them with the breadcrumbs.If possible squeeze them a little bit.Then put the into a baking tray with oil greased baking sheet.
After baking them for around 20 minutes they are ready to serve with your preferable sauces.
Little tips:You may freeze the nuggets after the coating process into ziploc freezer bags bag for 4 to 5 months.
