Microwaved Prawn Pulao
After a long day work, I felt like eating something authentic home-made Indian dish.But don’t fell like spending a long time in the kitchen. My Mum used to cook prawn pulao with slightly fried boiled eggs ,mixed winter vegetables and garam masala.Suddenly I could smell that aroma in my house.I and my sister had burned our tongues so many times,just because we could not wait till it cools down.Mum used to add green paper , carrots, beans in that pulao and cooked in a pressure cooker.I have skipped the vegetables and fried eggs just to avoid chopping and frying boiled eggs because I am so tired. This dish takes 15 to 17 minutes to cook .By the time I freshen up my dinner is ready.But you need to have cleaned prawns, ready to cook in your stock.
This recipe is very tasty and easy to cook in short time. A different flavour of butter ,prawn and garam masala will bring an actual Indian test to your mouth.You will need few basic Indian spices .
soaked basmati rice : 1 cup
Water to cook the rice: 2 cups
Prawns : 15 to 20 as you like
Butter 2 tablespoon in room temperature, oil 1 tablespoon
Cumin seeds 1 teaspoon
One small onion chopped.If onion is large you will need half
Garlic cloves : 2 large or 4 small
Turmeric powder: half teaspoon
Red chili powder: 1 teaspoon
Cinnamon powder: 1 teaspoon
Grated fresh nutmeg powder .It is important to use freshly grated nutmeg powder for extra flavour
Whole cloves: 3 to 4
Whole cardamom : 2 to 3
Salt to taste
Sugar : 1 teaspoon
Raw red onion and green chili to garnish
Step 1: Take melted butter and oil into a microwaved bowl and add cumin seeds. Now cook them for 1 minute.
Step 2: Next add onion ,garlic,turmeric powder,cinnamon powder, red chili powder, grated nutmeg on top , add salt.Mix everything and microwaved them for 2 minutes
Step 3:Now add soaked rice into the bowl and mix gently.
Step 4: Add water.Now add sugar and check the salt by testing little water. The test of salt at this point will remain same afer cooking.Cook them for 14 minutes.
Step 5: After cooking rice keep it inside the microwave for 2 minutes just to settle down the heat,then take the bowl out.Be careful of the hot bowl.Now gently stir with the fork.
Final step: Garnish the rice with either fried or raw onion and chili. You can have them just like this or with any type of curry or raita (Indian yogurt sauce).
