Semolina and pistachios cookies
Pistachios cookies are immensely popular in London.Semolina rusk is widely loved by Indians. I always love to mingle two countries tests. I think it’s been happening since British came to India .That time Indian chefs had produced so many popular dishes ,which are the mixture of two different cousins.
These homemade cookies are much more healthier and better option than buying them from outside.It takes less than half an hour.So it’s not a big deal to bake them at home in no time.
Cooking time: 13 minutes
Pistachios: 30 to 40 grams
Semolina: 140 grams
All purpose flour: 140 grams
Sugar: 60 grams
Butter: 100 grams in room temperature
Milk: 2 table spoon
Pre heat the oven at 180 degrees.
Mix all ingredients except pistachios and milk.Add milk if the dough is too dry.Rub the mixture with two hands.Add milk if necessory.Make the dough.Don’t rub too much.To make the dough it will take 5 to 7 minutes.
Shape them in round or what ever you prefer.
Grease the baking tray with little butter or oil.
Place the cookies in the tray.
Cook them in the oven for 10 to 13 minutes or until it becomes brown in color.
